I add half the arugula and basil on top of the frozen pizza beforehand, but cover that with another layer of shredded mozzarella. I put the fresh mozzarella and tomatoes on top of that
near the end of cooking (~2 mins left or so) I throw the rest of the basil and arugula on top!
