The biggest impact that Bebop had on shows that came after was a 2000s trend of expensive, lushly animated, western-styled shows that largely bombed lol.
My only thing to add to Bebop talk is that my favorite episode is Speak Like a Child so skip to that if you have a chance
Anyway! The "Anime Canon" is constantly changing and is completely different depending on which part of the world you're from, so I don't think there ever really is a set of series that you need to watch to be an anime fan. And like, you will burn out if you try to watch all series that people say are important. I personally tried really hard to get into Gundam before it was clear to me that it was a niche that wasn't for me.
I find it kind of freeing to have like, all these anime series out there that are excellent and worth watching, but nothing that's so important that you must must watch it. The only thing that comes close to that is Eva but even that is like, really niche in its own way.
Anyway I hope that made sense enjoy anime!!!

It feels like such a huge part of anime canon to not have seen, but then again idk how much stuff actually references it compared to like, evangelion? which I also haven't seen and keep meaning to

Nothin personnel...

To be fair, you have to have a very high IQ to understand Coyboy Beboy. The humour is extremely subtle, and without a solid grasp of anime and pop culture most of the jokes will go over a typical viewer's head. There's also Spike's devil-may-care outlook, which is deftly woven into his characterisation- his personal philosophy draws heavily from 70s action film, for instance. The fans understand this stuff; they have the intellectual capacity to truly appreciate the depths of these jokes, to realise that they're not just funny- they say something deep about LIFE. As a consequence people who dislike Coyboy Beboy truly ARE idiots- of course they wouldn't appreciate, for instance, the humour in Spike's existential catchphrase "See you space cowboy," which itself is a cryptic reference to jazz. I'm smirking right now just imagining one of those addlepated simpletons scratching their heads in confusion as Sinchirō Watababe's genius wit unfolds itself on their television screens. What fools.. how I pity them. 😂
And yes, by the way, i DO have a Fae Valentine tattoo. And no, you cannot see it. It's for the ladies' eyes only- and even then they have to demonstrate that they're within 5 IQ points of my own (preferably lower) beforehand. Nothin personnel kid 😎

You have permission to skip it lol. There are individual episodes of Bebop that I love but the overarching plot doesn't really work.

The latest arc going on in the manga is shaping up to be as dense if not more than the chimera ants.
And it would be hell just reading it monthly. Then there are the hiatuses on top of that.
I was reading through it all a second time and the difference was huge. I could actually follow what was happening lol.

You're not the only one, lol. That's largely a source material problem, as the manga got indulgent, dense, and hard to follow at this point. The arc had a significantly worse reputation until the anime, where it was slow but at least you had a reasonable chance of actually understanding it. I do love it a lot tho

lol, I started out with a list of my favorite anime from each year so it ended up as a fairly even spread. here's a breakdown because I'm a big nerd:
2010: 2
2011: 3
2012: 2
2013: 2
2014: 4
2015: 2
2016: 2
2017: 3
2018: 4
2019: 1
so that's a slight trend overall towards older (2010-14) shows vs newer, 13 to 12. in the top ten that's reversed, 2015-19 wins 6 to 4. there's a little concentration in 2017-18, offset by only one show from 2019. nothing significant I feel.
I will say I'm being a weirdo by putting Beastars on the list as that show hasn't even finished airing, but I fucking love Beastars. I knew I was either going to overrate or underrate it by ranking it now so I decided to aim high.

same, tho I think the comedic pacing works a bit better in the manga than in the show (THE MANGA IS SO SO SO GOOD)

Has anime gotten a lot better over the course of the decade or are YOU doing a big recency bias! (if it turns out that most of these aren't that recent and I'm just old I'm gonna crumble into a pile of dust and blow away)

I watched the first 2 eps of the anime with the gun head man and enjoyed it. Lotta the random ladies were very much drawn by horny dudes but the main lady doesn't seem to suffer from that at all and i love her.
Stars Align is one of those where I wanna watch it but also dunno if I can like. Handle that.
Def gonna hit Beastars when it gets free from jail.
How does the isekai one treat its lady characters? My main impression of that whole genre is that it's pretty garbage about women
