wasnt too hungry tonight but it was time to feed the starter. thought it would be impolite to leave the lady to eat alone.
for fellow friends of fungi and buddies of bacteria: I really recommend crumpets as a use for discard. I have been making them for years. I never measure anything and its just nice and easy.
- take the discard
- add a bit of baking soda
- add a bit of sugar (add more if you prefer it less tart)
- add a bit of salt
- add batter to a small pan or preferably fill some egg rings if you have them.
- cook low and slow til the liquid top solidifies. toast if you want it more done. you can also flip for a more thorough cook but it interferes with the nice texture
