Milk spoils when bacteria gets a foothold and reproduces, and it makes your tummy hurt because it's acidic and the bacteria defeats your natural gut bacteria.

But these bacteria do not produce harmful substances until many weeks of spoilage, which means you can safely kill the bacteria by cooking with the milk. The milk retains its newfound acidity and pungent flavor, which makes it perfect for use in buttermilk recipes, such as biscuits.

That's why I personally call it "rancid" and not "spoiled". Food waste is a crime and is punishable by death.
