I wanna watch the numbers go up while solo levelling a character, something like GW2 or WoW but not those games.

old school runescape can satisfingly grindy and mindless, but occasionally when you want to spice things up there's also plenty of quests with really cute and fun writing

phantasy star online 2, maybe? it never got an official western release, but there's a fan-made translation patch that makes it playable enough.
