Minecraft Steve, Ryu, Fire Emblem uhhhh Byleth, Banjo Kazooie, Dragon Quest Hero with Erdrick as a skin. We got the Doom Slayer as a Mii costume.

Rayman was probably the safest bet (other than more Fire Emblem) and it's surprising we never even got a Mii skin.

It's funny that I was so sure Marvel was in. It's a video game brawler not a comic one.

As for Rayman, ubisoft stuff in other companies games doesn't happen often, and when it does it's always a limited time thing. The Assassins Creed/ Final Fantasy XV thing comes to mind, as the FF stuff is still in Origins but the (much more involved!) AC stuff in FF XV is long gone. Might never happen then, but who knows.
